White Chocolate-Macadamia Nut Cookies

- 1/2 cup butter or margarine, softened
- 1/2 cup shortening
- 3/4 cup firmly packed light brown sugar
- 1/2 cup sugar
- 1 large egg
- 1-1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 (6-ounce) package white chocolate baking bars, cut into chunks
- 1 (6.85-ounce) jar macadamia nuts, chopped
Instructions
- Beat butter and shortening at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add egg and vanilla; beat well. Combine flour, soda and salt; gradually add to butter mixture, beating well. Stir in white chocolate and nuts.
- Drop dough by rounded teaspoonfuls 2 inches apart onto lightly greased baking sheets.
- Bake at 350° F for 8 to 10 minutes, or until lightly browned. Cool slightly on baking sheets; remove to wire racks to cool completely.
Makes 5 dozen.
