    Bacon-Wrapped Filet

    Source of Recipe

From "The Pioneer Woman Cooks: A Year of Holidays"

    List of Ingredients

    • 2 slices thick-cut bacon
    • Two 8-ounce beef tenderloin filet steaks
    • Salt and pepper to taste
    • 2 Tbsp butter

    Instructions

    1. Preheat the oven to 450°F. Wrap one piece of bacon around each filet steak, and secure the bacon with a toothpick. Sprinkle both sides generously with salt and pepper.

    2. Melt the butter in a heavy ovenproof skillet over medium-high heat. When the butter is melted and sizzling, place the steaks in the pan and sear them for about 30 seconds.

    3. Use tongs to turn the filets over to the other side, then place the skillet in the oven for 3 minutes for medium-rare. Remove the skillet from the oven, then transfer the steaks to a plate and let them rest for another 3 to 4 minutes. Remove the toothpicks, place the steaks on a plate, and serve.

      Makes 2 servings.
