Bacon-Wrapped Filet

- 2 slices thick-cut bacon
- Two 8-ounce beef tenderloin filet steaks
- Salt and pepper to taste
- 2 Tbsp butter
Instructions
- Preheat the oven to 450°F. Wrap one piece of bacon around each filet steak, and secure the bacon with a toothpick. Sprinkle both sides generously with salt and pepper.
- Melt the butter in a heavy ovenproof skillet over medium-high heat. When the butter is melted and sizzling, place the steaks in the pan and sear them for about 30 seconds.
- Use tongs to turn the filets over to the other side, then place the skillet in the oven for 3 minutes for medium-rare. Remove the skillet from the oven, then transfer the steaks to a plate and let them rest for another 3 to 4 minutes. Remove the toothpicks, place the steaks on a plate, and serve.
Makes 2 servings.
