Coconut Rice Pudding

- 1 cup water
- 1/2 cup long-grain or medium-grain rice
- 1/8 tsp salt
- 1 cup unsweetened coconut milk
- 1-1/2 cups milk
- 1/3 cup sugar
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
Instructions
- Bring water to boil in small saucepan. Stir in rice and salt. Cover and simmer over low heat, stirring often, until water is almost fully absorbed, 10 to 15 minutes.
- Stir in coconut milk, milk, sugar, vanilla, and cinnamon. Simmer, stirring often, until spoon is able to stand up in pudding, 35 to 40 minutes. Serve warm or chilled.
