    Creamy New York Deli Coleslaw

    From "The Complete Cooking for Two Cookbook"

    List of Ingredients


    • 4-1/2 cups shredded green cabbage (1/2 small head)
    • 1 peeled and grated carrot
    • Salt and pepper
    • 1/4 cup mayonnaise
    • 2 Tbsp minced shallot
    • 1 Tbsp distilled white vinegar
    • 1/2 tsp Dijon mustard
    • 1/2 tsp sugar


    Instructions


    1. Toss cabbage and carrot with 1/2 teaspoon salt in colander and let drain for one hour; rinse and pat dry with paper towels.

    2. In large bowl, whisk mayonnaise, shallot, vinegar, mustard, and sugar together.

    3. Stir in cabbage and season with salt and pepper to taste. Cover and refrigerate until chilled, at least 30 minutes, before serving.

      Serves 2
