Creamy New York Deli Coleslaw

List of Ingredients
- 4-1/2 cups shredded green cabbage (1/2 small head)
- 1 peeled and grated carrot
- Salt and pepper
- 1/4 cup mayonnaise
- 2 Tbsp minced shallot
- 1 Tbsp distilled white vinegar
- 1/2 tsp Dijon mustard
- 1/2 tsp sugar
Instructions
- Toss cabbage and carrot with 1/2 teaspoon salt in colander and let drain for one hour; rinse and pat dry with paper towels.
- In large bowl, whisk mayonnaise, shallot, vinegar, mustard, and sugar together.
- Stir in cabbage and season with salt and pepper to taste. Cover and refrigerate until chilled, at least 30 minutes, before serving.
