    Refried Beans

    From "The Complete Cooking for Two Cookbook"

    List of Ingredients


    • 3/4 cup rinsed canned pinto beans (or red kidney or black beans)
    • 1/4 cup chicken broth
    • 2 Tbsp olive oil
    • 1/4 cup finely chopped onion
    • 1 clove garlic, minced
    • 1/8 tsp ground cumin
    • Salt and pepper to taste


    Instructions


    1. Process beans and chicken broth in food processor until smooth, about 30 seconds.

    2. Heat olive oil in 10-inch nonstick skillet over medium heat until shimmering. Add onion and cook until softened, 2 to 4 minutes. Stir in minced garlic and cumin and cook until fragrant, about 30 seconds.

    3. Stir in processed beans and cook until thickened, 3 to 5 minutes. Season with salt and pepper to taste, and serve.

      Makes 1 cup.
