Refried Beans

List of Ingredients
- 3/4 cup rinsed canned pinto beans (or red kidney or black beans)
- 1/4 cup chicken broth
- 2 Tbsp olive oil
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1/8 tsp ground cumin
- Salt and pepper to taste
Instructions
- Process beans and chicken broth in food processor until smooth, about 30 seconds.
- Heat olive oil in 10-inch nonstick skillet over medium heat until shimmering. Add onion and cook until softened, 2 to 4 minutes. Stir in minced garlic and cumin and cook until fragrant, about 30 seconds.
- Stir in processed beans and cook until thickened, 3 to 5 minutes. Season with salt and pepper to taste, and serve.
Makes 1 cup.
