    Sesame-Crusted Tuna with Wasabi Dressing

    List of Ingredients


    • Dressing:
    • 2 Tbsp mayonnaise
    • 1-1/2 tsp lime juice
    • 1-1/2 tsp wasabi paste
    • Salt and pepper
    • .
    • Tuna:
    • 1/4 cup sesame seeds
    • 2 (6- to 8-ounce) tuna steaks (preferably yellowfin), 1 inch thick
    • 1-1/2 Tbsp vegetable oil
    • Salt and pepper


    Instructions


    1. For the dressing:
      Whisk all ingredients together in bowl and season with salt and pepper to taste; set aside.

    2. For the tuna:
      Spread the sesame seeds in shallow dish. Pat tuna dry with paper towels, rub with 1-1/2 teaspoons oil, and season with salt and pepper. Press both sides of each steak in sesame seeds to coat.

    3. Heat remaining 1 tablespoon oil in 10-inch nonstick skillet over medium-high heat until just smoking. Lay steaks in skillet and cook until seeds are golden brown, about 2 minutes. Using two spatulas, gently flip steaks and continue to cook until seeds are just golden and fish registers 110°F (for rare), about 1-1/2 minutes (steaks will be opaque at perimeters and translucent red at center when checked with tip of paring knife), or 125°F (for medium-rare), about 3 minutes (steaks will be opaque at perimeters and reddish pink at center). Transfer steaks to cutting board and immediately slice on bias. Serve with wasabi dressing.

      Serves 2

      Variation:
      Sesame-Crusted Tuna with Ginger Soy Sauce

      Whisk following ingredients together in bowl and substitute for dressing: 2 tablespoons soy sauce, 2 tablespoons water, 1 thinly sliced small scallion, 1 tablespoon rice vinegar, 1 tablespoon sugar, 1 teaspoon grated fresh ginger, 1 teaspoon toasted sesame oil, and pinch red pepper flakes.
