- 1 cup milk
- 3 Tbsp sugar
- 1 Tbsp quick-cooking tapioca
- 1 egg yolk, beaten
- 1/8 tsp salt
- 1/2 tsp vanilla extract
Instructions
- In a saucepan combine the milk, sugar, tapioca, egg yolk and salt; let stand for 5 minutes.
- Cook and stir over medium heat until mixture comes to a full boil. Remove from the heat; stir in vanilla. Cool slightly. Spoon into serving dishes. Cover and refrigerate until chilled.
Makes 2 servings.
