Turkey-Cranberry Monte Cristo

List of Ingredients
- 2 cups vegetable oil
- 4 slices Texas toast bread
- 2 tsp cranberry sauce
- 6 thin slices roast turkey
- 2 slices Havarti cheese
- 2 slices honey ham
- 2 tsp honey mustard
- 3 large eggs
- 1/4 tsp salt
- 2 Tbsp powdered sugar
Instructions
- Heat the oil in a large skillet.
- Meanwhile, prepare the first sandwich. Spread one slice of bread with cranberry sauce and top it with 3 slices of the turkey, 1 slice of the cheese, and 1 slice of the ham. Spread a second slice of bread with honey mustard and place on top of the sandwich. Repeat this for the second sandwich. Fasten each sandwich together with at least 4 toothpicks.
- In a large flat bowl beat the eggs with the salt. Submerge and batter each sandwich with the egg. Deep-fry each sandwich in the hot oil for about 2 minutes on each side, or until golden brown. Remove from the oil and place on paper towels to soak up any excess oil. Sprinkle the sandwiches with a fine dusting of powdered sugar, cut the sandwiches in half crosswise, and remove the toothpicks before serving.
Makes 2 sandwiches.
