    Turkey-Cranberry Monte Cristo

    Source of Recipe

From "My Southern Food" by Devon O'Day

    List of Ingredients

    • 2 cups vegetable oil
    • 4 slices Texas toast bread
    • 2 tsp cranberry sauce
    • 6 thin slices roast turkey
    • 2 slices Havarti cheese
    • 2 slices honey ham
    • 2 tsp honey mustard
    • 3 large eggs
    • 1/4 tsp salt
    • 2 Tbsp powdered sugar

    Instructions

    1. Heat the oil in a large skillet.

    2. Meanwhile, prepare the first sandwich. Spread one slice of bread with cranberry sauce and top it with 3 slices of the turkey, 1 slice of the cheese, and 1 slice of the ham. Spread a second slice of bread with honey mustard and place on top of the sandwich. Repeat this for the second sandwich. Fasten each sandwich together with at least 4 toothpicks.

    3. In a large flat bowl beat the eggs with the salt. Submerge and batter each sandwich with the egg. Deep-fry each sandwich in the hot oil for about 2 minutes on each side, or until golden brown. Remove from the oil and place on paper towels to soak up any excess oil. Sprinkle the sandwiches with a fine dusting of powdered sugar, cut the sandwiches in half crosswise, and remove the toothpicks before serving.

      Makes 2 sandwiches.
