    Asian BBQ Chicken

    From "Holiday Slow Cooker" by Leigh Anne Wilkes

    List of Ingredients


    • 3 pounds boneless chicken thighs
    • Salt and pepper to taste
    • ¾ cup honey
    • â…“ cup ketchup
    • ½ cup soy sauce
    • 2 teaspoons rice wine vinegar
    • 1 tablespoon fresh minced ginger
    • 1 teaspoon hot chili garlic sauce
    • 1 tablespoon lemon zest
    • 2 tablespoons cornstarch


    Instructions


    1. Trim the excess fat from the chicken thighs. Sprinkle the chicken with salt and pepper and place them in a 6-quart slow cooker.

    2. Mix together the remaining ingredients except the cornstarch. Cook on high for 2 to 3 hours or on low for 4 to 5 hours.

    3. Remove the chicken and shred it with a fork.

    4. Add the cornstarch to the remaining liquid in the slow cooker and cook on high for 15 to 30 minutes, or until the sauce thickens.

    5. Serve over rice, on a sandwich or in a salad.


      Serves 8
