    List of Ingredients


    • 1 large red or green bell pepper, chopped
    • 1 large onion, chopped
    • 2 tomatoes, chopped
    • 1 cup chopped celery
    • 1 clove garlic, chopped
    • 2 Tbsp minced fresh parsley
    • 1 tsp dried thyme
    • 1 tsp dried oregano
    • 1/8 tsp cayenne pepper
    • 1 tsp salt
    • 6 ounces smoked sausage, chopped
    • 8 ounces chicken breast, skinned, boned and chopped
    • 2 cups beef broth
    • 1/2 lb. cooked, shelled medium shrimp, halved lengthwise
    • 1 cup cooked rice


    Instructions


    1. In slow cooker, combine red bell pepper, onion, tomatoes, celery, garlic, parsley, thyme, oregano, cayenne pepper, salt, smoked sausage, chicken and broth. Cover and cook on LOW for 10 hours.

    2. Increase temperature to HIGH. Add shrimp and rice. Cover and cook for 30 minutes.

      Serves 8
