List of Ingredients
- 1 large red or green bell pepper, chopped
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 cup chopped celery
- 1 clove garlic, chopped
- 2 Tbsp minced fresh parsley
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/8 tsp cayenne pepper
- 1 tsp salt
- 6 ounces smoked sausage, chopped
- 8 ounces chicken breast, skinned, boned and chopped
- 2 cups beef broth
- 1/2 lb. cooked, shelled medium shrimp, halved lengthwise
- 1 cup cooked rice
Instructions
- In slow cooker, combine red bell pepper, onion, tomatoes, celery, garlic, parsley, thyme, oregano, cayenne pepper, salt, smoked sausage, chicken and broth. Cover and cook on LOW for 10 hours.
- Increase temperature to HIGH. Add shrimp and rice. Cover and cook for 30 minutes.
