    Swedish Brown Beans

    List of Ingredients


    • 6 cups water
    • 1 lb. dry Swedish brown beans (2-1/4 cups)
    • 1/3 cup packed brown sugar
    • 1/4 cup vinegar
    • 1 cinnamon stick
    • 1-1/2 tsp salt
    • 2 Tbsp dark corn syrup
    • Crisp-cooked bacon, drained and crumbled (optional)


    Instructions


    1. In saucepan bring water and beans to boiling; reduce heat and simmer, covered, for 2 hours. Remove from heat and pour into a large bowl; cover and chill.

    2. Drain beans, reserving 1-1/2 cups of the cooking liquid. Transfer beans and reserved bean liquid to crockpot; stir in brown sugar, vinegar, stick cinnamon, and salt. Cover and cook on LOW heat setting for 12 to 14 hours. (Stir the beans after 10 hours and again after 12 hours to be sure beans cook evenly.)

    3. To serve, remove cinnamon stick and stir in dark corn syrup. Mash beans slightly, if desired. Garnish beans with crumbled bacon, if desired.

      Makes 6 servings.
