    Apple Brown Betty

    From "The Baker's Dozen Cookbook"


    List of Ingredients


    • 2 cups fresh bread crumbs
    • 1 cup packed light brown sugar
    • 1/4 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • 4 large tart apples (such as Pippin, Granny Smith or Golden Delicious), peeled, cored and cut into 1/8-inch wedges
    • 8 Tbsp (1 stick) unsalted butter, chilled and cut into 1/2-inch cubes
    • .
    • Heavy cream, for serving (optional)


    Instructions


    1. Position a rack in the center of the oven and preheat to 375 degrees (F). Lightly butter a 6- to 8-cup souffle dish.

    2. Spread the bread crumbs on a baking sheet and bake, stirring occasionally, until very lightly toasted -- about 10 minutes. Do not over-brown. Set aside.

    3. Combine the brown sugar, cinnamon and nutmeg in a large bowl. Add the apples and toss well. Spread half the apples in the prepared dish; sprinkle with half the bread crumbs and dot with half the butter. Repeat with remaining apples, bread crumbs and butter.

    4. Bake until the topping is golden brown and the apples are tender, about 45 minutes. Cool the Betty for 10 minutes. Spoon into shallow bowls and serve warm, with heavy cream passed on the side, if desired.

      Serves 4 to 6
