    Apple Butter Bread Pudding

    List of Ingredients


    • 4 eggs
    • 3/4 cup sugar
    • 1/2 tsp vanilla extract
    • 2 tsp ground cinnamon
    • 1 tsp ground nutmeg
    • 1 cup apple butter
    • 2 Tbsp butter or margarine, melted and cooled
    • 1-3/4 cups warm milk
    • 1/2 cup golden raisins
    • 1/2 cup chopped walnuts
    • 6-1/2 cups cinnamon-raisin bread, cut into 1/2-inch cubes
    • Sweetened whipped cream


    Instructions


    1. Grease a shallow 2-quart casserole. Preheat the oven to 350 degrees (F).

    2. In a large bowl, whisk together the eggs, sugar, vanilla, cinnamon, nutmeg, apple butter and melted butter until well blended. Whisk in the warm milk. Stir in the raisins, walnuts and bread cubes.

    3. Transfer to the prepared pan and bake in the preheated oven 40 minutes, or until set in the center. Transfer to a rack and let cool 1 hour.

      Serve warm with sweetened whipped cream.

      Makes 8 to 10 servings.
