    Blackberry Cobbler

    List of Ingredients


    • 1/4 cup butter, softened
    • 1/2 cup sugar
    • 1 cup all-purpose flour
    • 2 tsp baking powder
    • 1/2 cup milk
    • 2 cups fresh or frozen blackberries
    • 3/4 cup raspberry (or apple) juice
    • Ice cream, optional


    Instructions


    1. In a mixing bowl, cream butter and sugar.

    2. Combine flour and baking powder; add to creamed mixture alternately with the milk. Stir just until moistened. Pour into a greased 1-1/2-quart baking pan.

    3. Sprinkle blackberries over mixture in pan. Pour the raspberry juice over all. Bake at 350 degrees (F) for 45 to 50 minutes or until golden brown.

      Serve warm; top with ice cream if desired.

      Makes 6 to 8 servings.
