Caramel Apple White Chocolate Trifle

List of Ingredients
- ¼ cup packed dark brown sugar
- 1 cup plus 2 Tbsp heavy whipping cream, divided
- 1 Tbsp butter
- 2 egg yolks
- 2 Tbsp apple schnapps
- 1 Tbsp sugar
- 2 (2-ounce) squares white chocolate, melted and cooled
- 1 (21-ounce) can apple pie filling
- Garnish: whipped cream, chopped pecans, caramel sauce
Instructions
- In a small saucepan, combine brown sugar, 2 tablespoons cream, and butter; cook over medium heat, stirring frequently, until slightly thickened, about 2 minutes. Set aside to cool slightly.
- In the top of a double boiler, whisk together egg yolks, schnapps, and sugar. Set pan over simmering water and cook, whisking constantly, until mixture has thickened and coats the back of a wooden spoon, about 4 to 5 minutes. Remove from heat and cool.
- In a medium bowl, beat remaining 1 cup cream at medium-high speed with an electric mixer until medium peaks form; fold into cooled egg mixture. Gently fold in melted chcoolate.
To serve:
Evenly layer apple pie filling, brown sugar mixture and mousse in 2 individual serving dishes. Chill for 30 minutes. Garnish with whipped cream, pecans and caramel sauce, if desired. Serve immediately.
Makes 2 servings.
