    List of Ingredients


    • 2 lbs. fresh bing cherries or 3 (17-oz) cans dark, sweet cherries - drained
    • 2 cups firmly packed dark brown sugar
    • Zest of two oranges
    • 5 whole cloves
    • 1 star anise (available at specialty food shops)
    • 1 cup brandy
    • Rounds of puff-pastry and ice cream, as accompaniments


    Instructions


    1. In a saucepan over moderate heat, combine the cherries, sugar, orange zest, cloves, and anise. Bring mixture to a boil, stirring; then simmer, covered, until cherries are soft.

    2. Add the brandy; bring to a simmer, and flambe.

    3. Place ice cream in the pastry puffs; spoon cherries over the ice cream.

      Serves 6 to 8
