Chewy Brownie Ice-Cream Sandwiches

- ¾ cup (6 ounces) salted butter
- 1 (4-ounce) 60% cacao bittersweet chocolate bar, chopped
- 1 ¼ cups granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- ¼ teaspoon baking powder
- â…› teaspoon salt
- Vanilla ice cream, softened
Instructions
- Preheat the oven to 350° F. Line the bottom and sides of a 15- x 10-inch jellyroll pan with aluminum foil, allowing 2 to 3 inches to extend over the sides; lightly grease the foil with cooking spray.
- Microwave the butter and chocolate in a large microwave-safe bowl at high 1 ½ to 2 minutes or just until melted and smooth, stirring every 30 seconds. Whisk in the sugar. Add the eggs, one at a time, whisking just until blended after each addition. Whisk in the flour, vanilla, baking powder, and salt. Pour the mixture into the prepared pan.
- Bake in the preheated oven for 18 to 20 minutes or until a wooden pick inserted in the center comes out with a few moist crumbs. Cool completely on a wire rack.
- Lift the brownies from the pan, using the foil as handles. Remove the foil; cut in half crosswise.
- Spread the softened ice cream onto one brownie half. Top with the remaining brownie half, pressing to allow the ice cream to reach the sides. Wrap with plastic wrap, and freeze 2 hours or until firm. Cut into 12 rectangles and serve immediately, or wrap each sandwich individually with plastic wrap, and freeze until ready to serve.
