Chocolate Bread Pudding with Whiskey Sauce

◦ � cup unsalted butter
◦ 7 cups French bread cubes
◦ 2 cups whipping cream
◦ 1 cup whole milk
◦ 8 bittersweet chocolate squares, chopped
◦ 5 egg yolks, lightly beaten
◦ ⅔ cup packed light brown sugar
◦ 1 tsp vanilla extract
◦ Whiskey Sauce (recipe follows)
◦ Chocolate shavings
Recipe
Melt the butter in a large skillet over medium. Add the bread; cook, stirring constantly, 3 minutes or until golden. Transfer to a greased 13-by-9-inch baking dish.
Bring the cream and milk to a boil over medium in the skillet. Remove from the heat; whisk in the chocolate, egg yolks, brown sugar, and vanilla. Pour over the bread cubes; let stand 30 minutes.
Preheat the oven to 325� F. Cover the baking dish with aluminum foil; cut six small holes in the foil to allow steam to escape. Place the baking dish in a roasting pan. Add hot water to the pan to a depth of 1� inches. Bake 1 hour and 45 minutes or until set. Remove from the water bath. Cool 30 minutes on a wire rack. Serve warm with the Whiskey Sauce and chocolate shavings, if desired.
Serves 8 to 10
Whiskey Sauce
◦ 1� cups whole milk
◦ � cup salted butter
◦ 1 cup granulated sugar
◦ 3 Tbsp cornstarch
◦ � cup water
◦ � cup bourbon
Cook the milk, butter, and sugar in a heavy saucepan over low, stirring often, until the butter melts and the sugar dissolves.
Combine the cornstarch and � cup water, stirring until smooth. Add to the butter mixture; stir in the bourbon. Bring to a boil over medium, stirring constantly; boil, stirring constantly, 1 minute.
Makes about 3� cups
