    Chocolate Bread Pudding with Whiskey Sauce

    â—¦ ¼ cup unsalted butter
    â—¦ 7 cups French bread cubes
    â—¦ 2 cups whipping cream
    â—¦ 1 cup whole milk
    â—¦ 8 bittersweet chocolate squares, chopped
    â—¦ 5 egg yolks, lightly beaten
    â—¦ â…” cup packed light brown sugar
    â—¦ 1 tsp vanilla extract
    â—¦ Whiskey Sauce (recipe follows)
    â—¦ Chocolate shavings

    Recipe

    Melt the butter in a large skillet over medium. Add the bread; cook, stirring constantly, 3 minutes or until golden. Transfer to a greased 13-by-9-inch baking dish.

    Bring the cream and milk to a boil over medium in the skillet. Remove from the heat; whisk in the chocolate, egg yolks, brown sugar, and vanilla. Pour over the bread cubes; let stand 30 minutes.

    Preheat the oven to 325° F. Cover the baking dish with aluminum foil; cut six small holes in the foil to allow steam to escape. Place the baking dish in a roasting pan. Add hot water to the pan to a depth of 1½ inches. Bake 1 hour and 45 minutes or until set. Remove from the water bath. Cool 30 minutes on a wire rack. Serve warm with the Whiskey Sauce and chocolate shavings, if desired.


    Serves 8 to 10


    Whiskey Sauce
    â—¦ 1½ cups whole milk
    â—¦ ½ cup salted butter
    â—¦ 1 cup granulated sugar
    â—¦ 3 Tbsp cornstarch
    â—¦ ¼ cup water
    â—¦ ½ cup bourbon

    Cook the milk, butter, and sugar in a heavy saucepan over low, stirring often, until the butter melts and the sugar dissolves.

    Combine the cornstarch and ¼ cup water, stirring until smooth. Add to the butter mixture; stir in the bourbon. Bring to a boil over medium, stirring constantly; boil, stirring constantly, 1 minute.


    Makes about 3½ cups
