    Chocolate Pudding

    List of Ingredients


    • 1-3/4 cups Instant Chocolate Pudding Mix (recipe follows)
    • 2 cups milk
    • 2 cups whipping cream
    • 1 tsp vanilla extract


    Instructions


    1. Place dry pudding mix into medium saucepan. Add milk and whipping cream, and whisk to combine. Over medium heat, bring mixture to boil, continuously whisking gently. Reduce heat to low and cook 4 minutes while continuing to whisk.

    2. Remove from heat and stir in vanilla.

    3. Pour mixture through sieve and into individual dishes or 1-1/2-quart serving dish. Cover surface of pudding with plastic wrap. Place in refrigerator to chill completely before serving, approximately 4 hours.

      Makes 4 servings.

      INSTANT CHOCOLATE PUDDING MIX

      • 3 ounces Dutch-process unsweetened cocoa powder (about 1 cup)
      • 2 ounces cornstarch (about 1/2 cup)
      • 6 ounces powdered sugar (about 1-1/2 cups)
      • 1-1/2 ounces instant non-fat dry milk (about 1/2 cup)
      • 1 tsp salt

      In large bowl or plastic container with lid, combine cocoa, cornstarch, sugar, instant non-fat dry milk, and salt. Store in airtight container in refrigerator up to 1 month.

      Makes 3-1/2 cups mix.
