    Grasshopper Mousse 'Cocktails'

    List of Ingredients


    • 3 cups mini-marshmallows
    • 1/4 cup milk
    • 3 ounces white chocolate, chopped
    • 2 Tbsp white crème de cacao liqueur
    • 2 Tbsp green crème de menthe liqueur
    • 1 cup whipping cream
    • 2 Tbsp powdered sugar
    • .

    • 1 Tbsp green crème de menthe
    • Lightly sweetened whipped cream
    • Dark chocolate curls


    Instructions


    1. In microwave oven, or in a nonstick saucepan over low heat, melt the marshmallows and milk together, stirring frequently. Add the white chocolate, and stir until melted and mixture is completely smooth. Add liqueurs and stir until completely incorporated. Cool to room temperature.

    2. In a cold bowl, whip the cream with the powdered sugar until stiff. Gently stir about one-quarter of the whipped cream into the chocolate mixture to lighten it. Then lightly and quickly fold the chocolate mixture into the remaining whipped cream until no white streaks remain. Spoon mousse into 6 cocktail glasses, tent each with plastic wrap, and chill thoroughly, at least 2 hours or up to overnight, before serving.

    3. To serve: Drizzle 1/2 teaspoon green crème de menthe into each glass. Dollop each serving with a pouf of lightly sweetened whipped cream, then sprinkle with a few chocolate shavings.

      Makes 6 servings.
