Kahlua Mousse

- -- For the Mousse --
- 1 lb. dark sweet chocolate, cut in pieces
- 3 oz. butter, cut in pieces
- 1/2 cup sifted powdered sugar
- 3 eggs, separated
- 1/4 cup Kahlua
- 1 tsp instant coffee powder
- 2 cups whipping cream
- Whipped cream, optional
- *
- -- For the Kahlua Cream Topping --
- 1 cup whipping cream
- 2 Tbsp Kahlua
Instructions
- In top of double boiler, melt chocolate and butter over simmering water.
- In large bowl, combine sugar, egg yolks, Kahlua, and coffee powder. Blend in chocolate mixture. Whip cream until stiff peaks form; fold into the Kahlua-chocolate mixture. Beat egg whites until soft peaks form; fold into mixture.
- Spoon mousse into serving bowl or dessert glasses. Refrigerate for 4 hours or overnight.
- To make the Kahlua Cream Topping: Whip 1 cup whipping cream with 2 tablespoons Kahlua until stiff peaks form; spoon topping onto mousse and garnish, if desired.
