Margarita Mousse

List of Ingredients
- 5 egg yolks
- 1 cup sugar
- 1 Tbsp lemon zest
- 1 Tbsp lemon juice
- 1 Tbsp lime zest
- 1 Tbsp lime juice
- ½ cup margarita mix
- 1/8 tsp salt
- 4 Tbsp butter, cut into pieces
- 2 Tbsp tequila
- 1 drop green food coloring (optional)
- 1 cup heavy whipping cream

- Garnish: lime slices
Instructions
- In a medium heavy-duty saucepan, whisk together egg yolks, sugar, lemon zest, lemon juice, lime zest, lime juice, margarita mix, and salt.
- Cook over medium heat, whisking constantly, for 7 to 8 minutes, or until thickened. Remove from heat; whisk in butter, tequila and food coloring, if desired. Cool for 20 minutes; cover and chill for 2 hours.
- In a medium bowl, beat cream at high speed with an electric mixer until stiff peaks form. Fold whipped cream into margarita-custard mixture. Chill until ready to serve.
Garnish with lime slices, if desired.
Makes 8 to 10 servings.
Final Comments
For a special presentation, moisten the rim of mini margarita glasses and press into sugar. Serve mousse in the glasses, garnished with a lime slice.
