    Margarita Mousse

    List of Ingredients


    • 5 egg yolks
    • 1 cup sugar
    • 1 Tbsp lemon zest
    • 1 Tbsp lemon juice
    • 1 Tbsp lime zest
    • 1 Tbsp lime juice
    • ½ cup margarita mix
    • 1/8 tsp salt
    • 4 Tbsp butter, cut into pieces
    • 2 Tbsp tequila
    • 1 drop green food coloring (optional)
    • 1 cup heavy whipping cream
    • .
    • Garnish: lime slices


    Instructions


    1. In a medium heavy-duty saucepan, whisk together egg yolks, sugar, lemon zest, lemon juice, lime zest, lime juice, margarita mix, and salt.

    2. Cook over medium heat, whisking constantly, for 7 to 8 minutes, or until thickened. Remove from heat; whisk in butter, tequila and food coloring, if desired. Cool for 20 minutes; cover and chill for 2 hours.

    3. In a medium bowl, beat cream at high speed with an electric mixer until stiff peaks form. Fold whipped cream into margarita-custard mixture. Chill until ready to serve.
      Garnish with lime slices, if desired.

      Makes 8 to 10 servings.



    Final Comments


    For a special presentation, moisten the rim of mini margarita glasses and press into sugar. Serve mousse in the glasses, garnished with a lime slice.
