    Peach Gratin with Mint Sugar & Almonds

    List of Ingredients


    • 4 peaches
    • 2 Tbsp butter, melted
    • 2 Tbsp plus 1/4 cup sugar, divided
    • 1 egg
    • 1/4 cup milk
    • 1/8 tsp almond extract
    • 1/4 tsp vanilla extract
    • 1/4 cup flour
    • 1/8 tsp salt
    • 1/4 cup slivered almonds, finely chopped
    • 3 tsp finely chopped fresh mint, divided


    Instructions


    1. Bring a large pan of water to a boil. Remove from the heat and immerse the peaches in the water. Time about 30 to 60 seconds, until the skins begin to loosen. Drain and rinse briefly with cold water. When cool enough to handle, peel, pit and slice each peach into eighths.

    2. Brush half of the melted butter over the bottom and sides of a 9-inch glass pie dish. Sprinkle 2 tablespoons sugar evenly over the surface. Arrange the sliced peaches in the dish.

    3. Whisk together the egg, milk, almond and vanilla extracts until smooth. Slowly whisk in the flour and then the salt. Set aside. In a small bowl, combine 1/4 cup sugar with the chopped almonds and 2 teaspoons chopped mint.

    4. Strain the custard over the peaches to remove lumps. Sprinkle the sugar mixture evenly on top. Bake in a preheated 425-degree oven about 15 to 20 minutes, until the peaches are tender and the top is beginning to turn golden. Remove from the oven and sprinkle with the remaining teaspoon of mint. Serve warm.

      The gratin can be served with vanilla ice cream or whipped cream.

      Makes 6 to 8 servings.
