    Sauce: Butterscotch Sauce

    From "Williams-Sonoma: Cooking at Home"

    List of Ingredients


    • 1 cup firmly packed light brown sugar
    • ½ cup heavy cream
    • 4 tablespoons unsalted butter, cut into pieces
    • 2 tablespoons dark corn syrup
    • 3 tablespoons Scotch whisky or water
    • 1 teaspoon pure vanilla extract


    Instructions


    1. In a heavy saucepan over low heat, combine the brown sugar, cream, butter, corn syrup, and whisky and stir with a wooden spoon until the sugar dissolves and the butter melts, about 3 minutes.

    2. Raise the heat to medium-high and bring to a boil. Continue to boil, without stirring, until the sauce thinly coats the back of the wooden spoon or a candy thermometer registers 224° F, about 4 minutes.

    3. Remove the sauce from the heat. Stir in the vanilla and let cool slightly before using.


      Makes about 1â…“ cups
