Sauce: Caramel Strawberry Sauce

- 1 cup sugar
- 1/2 cup water
- 2 pints strawberries, hulled and thickly sliced
- 2 Tbsp dark rum or 1 tsp vanilla
Instructions
- In a large heavy saucepan, stir together the sugar and water. Heat over medium heat, stirring, until the sugar has dissolved. Bring to a boil and continue boiling without stirring until the syrup is a light golden caramel color, about 10 to 12 minutes.
- Add the strawberries, standing back, as the caramel will bubble up. Reduce the heat to medium and cook, stirring, until the caramel dissolves and the strawberries have softened, about 3 minutes.
- Remove from the heat and stir in the rum or vanilla. Serve warm, at room temperature, or chilled over vanilla ice cream.
Makes about 3 cups.
