    Sauce: Dark Chocolate Sauce

    List of Ingredients


    • 1-1/2 cups heavy cream
    • 2/3 cup packed dark brown sugar
    • 4 ounces good bittersweet chocolate (not unsweetened), finely chopped
    • 3 ounces unsweetened chocolate, finely chopped
    • 1/2 stick (4 Tbsp) unsalted butter, softened
    • 3 to 4 Tbsp DiSaronno Amaretto or other almond-flavored liqueur (to taste)


    Instructions


    1. Combine cream and sugar in a 2-quart heavy saucepan and bring to a boil over moderately high heat, whisking until sugar is dissolved.

    2. Remove from heat, add chocolates, and whisk until melted. Add butter and amaretto, and whisk until sauce is smooth. Let cool slightly before serving.

      Makes about 3 cups.



    Final Comments


    The cooled sauce can be refrigerated in an airtight container for up to 1 week. Reheat in a double boiler, stirring occasionally, or in a microwave.
