    Southern Sideboard's Rich Bourbon Dessert

    List of Ingredients


    • 5 dozen individually wrapped Amaretti macaroons
    • 1 cup good bourbon
    • 2 cups unsalted butter, softened
    • 2 cups sugar
    • 1 dozen eggs, separated
    • 4 (1-ounce) squares unsweetened chocolate, melted
    • 1 ½ teaspoons vanilla
    • 1 cup chopped pecans
    • 2 dozen ladyfingers
    • 2 cups whipping cream, whipped
    • Confectioners' sugar


    Instructions


    1. Soak the macaroons in the bourbon. Cream the butter and sugar until light. Beat the egg yolks until light, and blend in to the sugar/butter mixture. Fold the chocolate into the mixture. Add the vanilla and pecans, mixing gently. Whip the egg whites until stiff, and fold into the chocolate mixture.

    2. Line a 10-inch springform pan, bottom and sides, with ladyfingers. Pour a layer of the chocolate mixture into the springform pan, and then add a layer of bourbon-soaked macaroons, alternating layers and ending with the chocolate mixture. Cover the pan and chill overnight.

    3. When ready to serve, remove the sides of the pan. Nap with whipped cream that has been flavored with confectioners' sugar and a bit of bourbon to taste.
