    Sparkling Berry Jell-O with Fresh Raspberries

    • 1 (6-oz.) pkg. Sparkling Wild Berry Jell-O
    • 1-1/2 cups boiling water
    • 1-1/4 cups cold seltzer water or club soda
    • 1-1/4 cups cold sparkling apple-cranberry juice
    • 1 cup fresh raspberries, gently rinsed


    Instructions


    1. Put the gelatin mix into a medium bowl and stir in the boiling water. Set aside 6 minutes, stirring often, until the gelatin is completely dissolved.

    2. Slowly add the seltzer water and juice, stirring just enough to blend. Don't overstir. Cover the bowl and refrigerate 1 hour.

    3. Stir in the raspberries. Transfer the mixture to a flat casserole, such as a 9x13-inch dish; cover and refrigerate several hours to set.

    4. Cut the gelatin into about 1-inch squares. Fluff up with a thin spatula and spoon into champagne glasses. Cover and refrigerate until ready to serve.

      Makes 8 to 10 servings.
