    Tart Cherry Dessert Omelet

    List of Ingredients


    • 4 eggs, lightly beaten
    • 1/2 cup fresh ricotta cheese
    • 1/4 cup sugar
    • 1 (15-oz.) can tart pie cherries with juice
    • 1 Tbsp cornstarch
    • 1/4 tsp vanilla extract
    • 2 tsp butter
    • 1/4 cup sliced almonds, toasted


    Instructions


    1. In a bowl combine eggs, ricotta and 1 teaspoon sugar, and stir until blended; set aside.

    2. In a saucepan, bring cherry juice from can (about 1/2 cup) to a simmer over medium-high heat. Blend the cornstarch with 1/4 cup cold water and add to the warm juice with remaining sugar (add to taste), stirring constantly until mixture thickens, 5 to 7 minutes. Drain remaining cherries well and add to sauce; stir in vanilla extract and set aside.

    3. In a frying pan, heat butter over medium-high heat until foamy. Add almonds to cover pan, then gently pour egg mixture over them to fill pan. Cover pan; reduce heat to medium-low and cook until puffed and set, 2 to 3 minutes.

      Spread cherry mixture over half the omelet, fold the other half over it and serve.

      Serves 4
