    Entree: Penne Pasta Casserole

    • 16 ounces penne pasta (or similar shape)
    • 1 Tbsp vegetable oil
    • ½ cup chopped onion
    • 2 cloves garlic, finely minced
    • 1 large (28-ounce) can tomatoes, broken up
    • 1 tsp dried leaf oregano, crumbled
    • Salt and pepper
    • 1½ to 2 cups shredded mozzarella cheese, divided


    Instructions


    1. Cook penne pasta in boiling salted water as directed on package; drain and set aside.

    2. Meanwhile, heat vegetable oil in a medium saucepan. Add onion; sauté for about 4 minutes or until tender. Add garlic, tomatoes, and oregano; cook until heated through. Taste and add salt and pepper.

    3. Combine cooked penne pasta, the tomato mixture, and 1 cup of the shredded cheese; spoon into a lightly buttered casserole. Sprinkle remaining cheese on top. Bake the penne pasta recipe for about 20 minutes at 350° F.

      Serves 6
