â—¦ 1 large onion, chopped
â—¦ 1 medium green pepper, chopped
â—¦ 1 tablespoon olive oil
â—¦ 1 clove garlic, minced
â—¦ 2 cups water
â—¦ 1 ½ cups uncooked elbow macaroni
â—¦ 1 can (16 ounces) mild chili beans, undrained
â—¦ 1 can (15 ½ ounces) great northern beans, rinsed and drained
â—¦ 1 can (14 ½ ounces) diced tomatoes, undrained
â—¦ 1 can (8 ounces) tomato sauce
â—¦ 4 teaspoons chili powder
â—¦ 1 teaspoon ground cumin
â—¦ ½ teaspoon salt
â—¦ ½ cup sour cream
Recipe
In a Dutch oven, sauté onion and green pepper in oil until tender. Add garlic; cook 1 minute longer.
Stir in the water, macaroni, beans, tomatoes, tomato sauce, chili powder, cumin and salt.
Bring to a boil. Reduce heat, cover and simmer 15 to 20 minutes or until macaroni is tender. Top each serving with 1 tablespoon sour cream.
