◦ 1 large onion, chopped
◦ 1 medium green pepper, chopped
◦ 1 tablespoon olive oil
◦ 1 clove garlic, minced
◦ 2 cups water
◦ 1 � cups uncooked elbow macaroni
◦ 1 can (16 ounces) mild chili beans, undrained
◦ 1 can (15 � ounces) great northern beans, rinsed and drained
◦ 1 can (14 � ounces) diced tomatoes, undrained
◦ 1 can (8 ounces) tomato sauce
◦ 4 teaspoons chili powder
◦ 1 teaspoon ground cumin
◦ � teaspoon salt
◦ � cup sour cream
Recipe
In a Dutch oven, saut� onion and green pepper in oil until tender. Add garlic; cook 1 minute longer.
Stir in the water, macaroni, beans, tomatoes, tomato sauce, chili powder, cumin and salt.
Bring to a boil. Reduce heat, cover and simmer 15 to 20 minutes or until macaroni is tender. Top each serving with 1 tablespoon sour cream.
