Mexican: Chalupas

- Shortening
- 12 corn tortillas
- Salt
- 3 cups refried beans
- 2 cups red or green salsa
- 2 cups grated sharp Cheddar cheese
- 1-1/2 cups shredded lettuce
- 2 tomatoes, chopped
- 1-1/2 cups guacamole
Instructions
- Heat 4 inches of shortening in a heavy pan over medium-high heat.
- Fry each tortilla in hot shortening, submerging it with a round wooden roller, ladle, or similar object. (Tortilla will form into a cup shape.) Drain on absorbent towels and sprinkle lightly with salt.
- Fill each chalupa with 1/4 cup refried beans, 2 tablespoons salsa, and 2 tablespoons cheese.
- Place chalupas on a baking sheet and heat in a 375-degree oven for approximately 10 minutes, or until cheese melts.
Garnish chalupas with shredded lettuce, chopped tomato and guacamole before serving.
Makes 12 chalupas.
