- 1/2 cup shortening
- 4 cups cooked pinto beans
- 1/2 to 1 cup bean liquid
- 2 cups grated sharp Cheddar cheese
Instructions
- Heat shortening in a medium skillet over medium heat.
- Add beans and bean liquid to the shortening. Mash beans and cook for 10 to 15 minutes.
- Add 1-1/2 cups cheese to the beans and stir for 2 to 3 minutes over low heat.
Garnish with remaining cheese before serving.
