Indian: Corn and Rice Pilaf (Pullao)

List of Ingredients
- 1 Tbsp vegetable oil
- 1 Tbsp cumin seeds
- 1 cup basmati or any long-grain rice, rinsed
- 1 cup corn kernels
- 1 tsp turmeric
- Salt to taste
- 2 cups water
- Garnish: grated carrot and finely chopped fresh coriander
Instructions
- In a large saucepan, heat the oil over medium heat. Add the cumin seeds. As soon as they splatter, add the rice; sauté for 1 minute.
- Add the corn, turmeric, salt and water. Let the mixture come to a boil, then cover and reduce the heat. Cook, without stirring, for 10 minutes or until the rice is cooked through and the water is all dried up.
Serve, garnished with grated carrot and chopped coriander.
