Mexican: Sopaipillas

- 4 cups flour
- 2 tsp baking powder
- 2 tsp salt
- 2 tsp shortening
- 1-1/4 cups water
- Shortening for deep-frying

- Honey or cinnamon sugar, for serving
Instructions
- Sift together the flour, baking powder and salt. Add 2 teaspoons shortening and water and knead until smooth. Put into a plastic bag and let stand for 2 hours.
- Roll dough very thin and cut into small triangles. Fry in deep fat heated to 375 degrees (F) until golden brown. Turn once. Drain on paper towels.
Serve with honey or sprinkled with cinnamon sugar. (These are best made just before serving. They do not reheat well.)
Makes 12 servings.
