    Thai: Thai Shrimp Kabobs with Peanut Sauce

    List of Ingredients


    • 1 lb. tiger shrimp
    • Olive or peanut oil
    • Salt and pepper
    • 2 green onions, chopped
    • 1/4 cup chopped cilantro
    • 1 jalapeno pepper, without seeds
    • 1 Tbsp minced ginger
    • 2 cloves garlic, minced
    • 1 stalk lemongrass, chopped
    • 1/4 cup packed brown sugar
    • 1/4 cup lime juice
    • 1/3 cup soy sauce
    • 1 Tbsp Thai fish sauce (Nam Pla)
    • 1/4 cup rice wine vinegar
    • 1/4 to 1/2 cup coconut milk
    • 1 cup peanut butter


    Instructions


    1. Arrange shrimp on skewers. (Bamboo skewers should be soaked in water before grilling.) Season shrimp with oil, salt and pepper. Grill 2 minutes per side, until pink.

    2. For peanut sauce: Puree green onions, cilantro, jalapeno pepper, ginger, garlic, lemongrass, brown sugar, lime juice, soy sauce, fish sauce, vinegar and coconut milk. Add peanut butter; puree until smooth.

    3. Let sauce sit at room temperature for 1 hour before serving. Accompany kabobs with peanut sauce.

      Serves 6
