    Thai: Thai Beef Salad (Yam Nua)

    List of Ingredients


    • 1 pound sirloin or tenderloin steak
    • 2 large cloves garlic, sliced crosswise very thin
    • 10 fresh hot Thai chiles or serrano peppers, sliced crosswise very thin (or to taste)
    • 5 Tbsp fish sauce
    • 5 Tbsp fresh-squeezed lime juice
    • 1 Tbsp sugar
    • ½ hothouse cucumber (or 1 small cucumber, seeds removed), peeled and sliced very thin
    • 2 to 3 shallots, sliced crosswise very thin (or 1 small red onion, sliced very thin)
    • 1 head Bibb or Boston lettuce (or 1 heart romaine lettuce)
    • 12 sprigs fresh mint, leaves removed and reserved, stems discarded
    • 3 to 4 sprigs cilantro, stems removed


    Instructions


    1. Grill or broil steak until medium-rare. Trim off any fat. Cool and slice thin, into pieces approximately 2 inches across and 1/8-inch thick.

    2. Mix garlic, chiles, fish sauce, lime juice and sugar in a small bowl. Add sliced meat and toss with cucumbers and shallots. Taste and add more fish sauce, if desired.

    3. Make a bed of lettuce on serving plate. Place the beef on top. Garnish with mint and cilantro.

      Makes 4 servings.
