Ukrainian: Poppy Seed Cake

â—¦ ¾ cup poppy seeds
â—¦ 1 cup milk
â—¦ ½ pound (2 sticks) butter
â—¦ 1 â…“ cups light brown sugar
â—¦ 3 eggs
â—¦ 2 cups unbleached white flour
â—¦ 3 teaspoons baking powder
â—¦ ½ teaspoon salt
â—¦ ½ teaspoon vanilla
â—¦ 1 teaspoon lemon rind
Recipe
Preheat oven to 350° F. Butter two medium loaf pans.
Heat poppy seeds and milk together in a saucepan.
Remove from heat right before it boils. Let stand until room temperature.
Cream butter with sugar. Add eggs, one at a time, beating *well* after each.
Sift dry ingredients together. Add alternately with poppy seed mixture, stirring well after each addition. Stir in vanilla and lemon rind at the end.
Bake in well-greased loaf pans at 350° F for 40 to 50 minutes, or until cake tester comes out clean.
Makes 2 loaves
