    Vietnamese: Greens with Garlic & Oyster Sauce

    List of Ingredients


    • 1 lb. greens, such as chard, mustard or kale
    • 2 Tbsp vegetable oil
    • 2 Tbsp minced garlic
    • 2 Tbsp oyster sauce
    • About 1/4 tsp salt


    Instructions


    1. Remove the thick ends of the stems, then chop the greens coarsely into about 2-inch pieces.

    2. Heat the oil in a large heavy skillet over medium-high heat.

    3. When hot, add the garlic and sauté 30 seconds. Add the greens and oyster sauce. Toss several times to coat the greens evenly in the sauce. Cook until the greens are done but still green and crunchy, 2 to 3 minutes. Salt to taste. Remove from the heat and transfer to plates.

      Makes 3 to 4 side-dish servings.
