    Salmon: Baked Whole Salmon

    List of Ingredients


    • 3/4 cup dry white wine
    • 1/4 tsp dried rosemary
    • 1/4 tsp dried tarragon
    • 3 green onions, minced
    • 3 peppercorns
    • 1/4 tsp dried thyme
    • 1/2 tsp dried basil
    • Celery leaves
    • 2 slices lemon
    • *
    • 1 (7- to 10-lb.) whole salmon


    Instructions


    1. Put wine and all remaining ingredients (except salmon) in a covered saucepan. Heat, without boiling, for 30 minutes.

    2. Rinse salmon; pat dry. Remove the tail and lay fish lengthwise on a sheet of foil. Pour the warm herb-wine over and inside the fish. Bring foil up over the fish and seal by crimping. (Be sure no liquid can escape.)

    3. Place on a baking sheet and bake at 350 degrees (F) 12 to 15 minutes per pound, or about 1-1/2 hours. Do not overbake.

      Can be served hot or cold.

      Serves 12 to 15
