Salmon: Baked Whole Salmon

- 3/4 cup dry white wine
- 1/4 tsp dried rosemary
- 1/4 tsp dried tarragon
- 3 green onions, minced
- 3 peppercorns
- 1/4 tsp dried thyme
- 1/2 tsp dried basil
- Celery leaves
- 2 slices lemon

- 1 (7- to 10-lb.) whole salmon
Instructions
- Put wine and all remaining ingredients (except salmon) in a covered saucepan. Heat, without boiling, for 30 minutes.
- Rinse salmon; pat dry. Remove the tail and lay fish lengthwise on a sheet of foil. Pour the warm herb-wine over and inside the fish. Bring foil up over the fish and seal by crimping. (Be sure no liquid can escape.)
- Place on a baking sheet and bake at 350 degrees (F) 12 to 15 minutes per pound, or about 1-1/2 hours. Do not overbake.
Can be served hot or cold.
