    Salmon: Broiled Salmon with Tarragon Butter

    List of Ingredients


    • 3 Tbsp butter
    • 1-1/2 Tbsp fresh lemon juice
    • Freshly ground pepper
    • 2 (1-inch-thick) salmon fillets
    • Salt
    • 1-1/2 Tbsp minced fresh tarragon (or 1 tsp dried)


    Instructions


    1. Preheat broiler.

    2. Melt butter with lemon juice in a small saucepan over low heat. Remove from heat and add a generous amount of pepper.

    3. Arrange salmon, skin side down, on a broiler-proof pan. Brush with half of the butter mixture. Season with salt.

    4. Broil, without turning, until just cooked through. Transfer to plates. Add tarragon to remaining butter; spoon over salmon and serve.

      Offer some fresh strawberries for dessert.

      Makes 2 servings,
      Can be doubled or tripled.
