    Pike: Cajun Beer-Batter Pike

    List of Ingredients


    • 3/4 cup beer
    • Vegetable oil (enough for deep-fryer)
    • 2 eggs, separated
    • 3/4 cup all-purpose flour
    • 3/4 tsp salt
    • 1-1/2 tsp vegetable oil
    • 1/4 tsp garlic powder
    • 1/4 tsp Cajun seasoning
    • 1/4 tsp cayenne pepper
    • 1-1/2 lbs. pike fillets


    Instructions


    1. Let beer stand at room temperature until flat. Heat oil to 375 degrees (F).

    2. Beat egg whites until stiff. Mix beer, flour, salt, 1-1/2 teaspoons vegetable oil, garlic powder, Cajun spice, cayenne pepper and egg yolks until smooth. Fold whipped egg whites into beer batter mix.

    3. Dip fish pieces into batter and fry until golden brown.
