Pike: Cajun Beer-Batter Pike

List of Ingredients
- 3/4 cup beer
- Vegetable oil (enough for deep-fryer)
- 2 eggs, separated
- 3/4 cup all-purpose flour
- 3/4 tsp salt
- 1-1/2 tsp vegetable oil
- 1/4 tsp garlic powder
- 1/4 tsp Cajun seasoning
- 1/4 tsp cayenne pepper
- 1-1/2 lbs. pike fillets
Instructions
- Let beer stand at room temperature until flat. Heat oil to 375 degrees (F).
- Beat egg whites until stiff. Mix beer, flour, salt, 1-1/2 teaspoons vegetable oil, garlic powder, Cajun spice, cayenne pepper and egg yolks until smooth. Fold whipped egg whites into beer batter mix.
- Dip fish pieces into batter and fry until golden brown.
