    Catfish: Cajun-Baked Catfish

    List of Ingredients


    • 2 cups cornmeal
    • 1 Tbsp pepper
    • 2 tsp salt
    • 8 (4-ounce) catfish fillets
    • 2 Tbsp Cajun seasoning
    • 1 to 2 tsp seasoned salt
    • ¼ cup butter or margarine, melted
    • Garnish: lemon wedges


    Instructions


    1. Combine first 3 ingredients. Dredge catfish fillets in cornmeal mixture; place fillets, skin-side down, on a greased baking sheet.

    2. Combine Cajun seasoning and seasoned salt; sprinkle over fillets. Drizzle with butter.

    3. Bake at 400° F for 30 minutes, or until golden and fish flakes with a fork. Garnish, if desired.

      Makes 4 servings.
