Catfish: Mom Al's Catfish

List of Ingredients
- 2 channel catfish fillets, about 3/4-lb. each
- 1 cup cornmeal
- 2 tsp Lawry's seasoning salt
- 1 tsp garlic powder
- Black pepper to taste
- Vegetable oil
Instructions
- Rinse fish in cold water; pat off excess moisture with a paper towel.
- Place cornmeal, seasoning salt, garlic powder and pepper in a paper bag. Shake lightly to mix all ingredients. Place the fish in the bag and shake until fish is coated.
- Fill a large skillet with vegetable oil to a height of about 2 inches; turn the burner on high until the oil is hot. Place the fish in the oil and reduce heat to medium. Cook the fish just until done, usually no more than about 5 minutes on each side.
