Catfish: Oven-Fried Catfish

List of Ingredients
- 6 (4-ounce) catfish fillets
- 3/4 tsp salt
- 1 (2-ounce) bottle hot sauce
- 1 to 1-1/2 cups yellow cornmeal
- Vegetable cooking spray
- Tartar Sauce
Instructions
- Sprinkle fish with salt; place in a heavy-duty zip-top plastic bag. Add hot sauce; seal and chill 2 hours, turning occasionally.
- Remove fish from marinade; dredge in cornmeal. Place fish on a baking sheet coated with cooking spray.
- Bake at 425 degrees for 10 minutes or until fish flakes with a fork. Broil 3 inches from heat 4 minutes or until lightly browned. Serve with Tartar Sauce.
Makes 6 servings.
TARTAR SAUCE
1 cup light mayonnaise
1 Tbsp dill pickle relish
1 Tbsp pimiento-stuffed olives
1 Tbsp capers
1 Tbsp grated shallots
1 Tbsp lemon juice
1/8 to 1/4 tsp hot sauce
Stir together all ingredients. Cover and chill 2 hours.
Makes 1-1/4 cups.
