    Catfish: Southern Baked Catfish

    List of Ingredients


    • 3 tsp vegetable oil, divided
    • 1 egg
    • 2 Tbsp milk
    • 1/4 tsp Tabasco sauce
    • 1/2 cup cornmeal
    • 1/2 tsp onion powder
    • 1/2 tsp paprika
    • 1/2 tsp sugar
    • 1/2 tsp salt
    • Freshly ground black pepper to taste
    • 1-1/3 lbs. catfish fillets
    • Lemon wedges


    Instructions


    1. Brush 2 teaspoons oil in the bottom of one large or 2 medium baking dishes. Combine the egg, milk and Tabasco in a bowl. Combine the cornmeal, onion powder, paprika, sugar, salt and several grindings of pepper; spread on a plate.

    2. Dip the catfish in the egg mixture and then in the cornmeal mixture. Put into the baking dish and sprinkle with the remaining teaspoon oil.

    3. Bake in a preheated 450-degree (F) oven and bake 12 minutes per inch of thickness. Test for doneness. Serve the catfish with wedges of lemon.

      Makes 4 servings.
