Catfish: Southern Baked Catfish

List of Ingredients
- 3 tsp vegetable oil, divided
- 1 egg
- 2 Tbsp milk
- 1/4 tsp Tabasco sauce
- 1/2 cup cornmeal
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp sugar
- 1/2 tsp salt
- Freshly ground black pepper to taste
- 1-1/3 lbs. catfish fillets
- Lemon wedges
Instructions
- Brush 2 teaspoons oil in the bottom of one large or 2 medium baking dishes. Combine the egg, milk and Tabasco in a bowl. Combine the cornmeal, onion powder, paprika, sugar, salt and several grindings of pepper; spread on a plate.
- Dip the catfish in the egg mixture and then in the cornmeal mixture. Put into the baking dish and sprinkle with the remaining teaspoon oil.
- Bake in a preheated 450-degree (F) oven and bake 12 minutes per inch of thickness. Test for doneness. Serve the catfish with wedges of lemon.
Makes 4 servings.
