- 12 littleneck clams, shucked, on the half shell
- 1 Tbsp each: finely chopped red, green and yellow sweet bell peppers
- 1½ strips bacon, fried crisp and chopped fine
- ½ tsp finely minced garlic
- ½ tsp finely minced shallots
- ½ cup fresh English muffin crumbs
- ½ cup grated Pecorino Romano cheese
- ½ cup (1 stick) sweet butter, softened
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
- Heat oven to 400° F.
- Combine peppers, bacon, garlic, shallots, crumbs, cheese, butter, thyme, salt and pepper in a bowl, mixing well. Top each clam with about 1½ tablespoons of the mixture.
Bake until topping is slightly browned, about 6 to 8 minutes.
