    Clams: Stuffed Clams

    List of Ingredients


    • 9 pounds cherrystone clams, scrubbed
    • 1/2 cup soft breadcrumbs (homemade)
    • 1/4 cup (1 ounce) shredded Swiss cheese
    • 2 bacon slices, cooked and crumbled
    • 2 Tbsp dry white wine
    • 1 Tbsp minced fresh parsley
    • 1 Tbsp butter, melted
    • 1 tsp Worcestershire sauce
    • 1/4 tsp pepper


    Instructions


    1. Shuck clams; release meat from bottom shells, reserving 16 shells. Arrange shells on an ungreased baking sheet; set aside.

    2. Chop clam meat (about 1-1/2 cups); drain. Combine clam meat, breadcrumbs, and remaining 7 ingredients in a bowl. Fill each clam shell with 1 heaping tablespoon clam mixture.

    3. Bake, uncovered, at 375° F for 20 minutes. Serve immediately.

      Makes 4 servings.
