Cod: LandShark Beer-Battered Fish
Source of Recipe
From "Margaritaville: The Cookbook" by Julia Tershen
List of Ingredients
- 1 large egg
- 1 cup LandShark Lager
- 1 tsp baking powder
- 1 tsp garlic powder
- Pinch of kosher salt, plus more as needed
- Pinch of freshly ground black pepper
- Pinch of cayenne pepper
- 1 cup all-purpose flour
- Neutral oil (such as canola or vegetable, for frying)
- 1½ pounds cod (or other firm white fish such as grouper), cut into thick strips
- Malt vinegar, for serving
Instructions
- Place the egg in a large bowl and whisk it well. Whisk in the beer, baking powder, garlic powder, salt, black pepper and cayenne. Whisk in the flour.
- Pour 1 inch of oil into a large heavy pot and heat the oil over medium heat. Test the oil: When a pinch of batter sizzles upon contact, it's ready. Carefully dip the fish into the batter just to lightly coat it and then places the pieces in the hot oil. Work in batches as necessary so the fish doesn't crowd the pot. Cook, turning the fish pieces a few times while they cook, until golden brown all over, about 4 minutes.
- Transfer the fish to a paper towel-lined plate and fry the rest (the fried fish can be kept warm on a wire rack in a 300°F oven while you fry the rest). Sprinkle the hot fish with salt and serve immediately, with malt vinegar alongside.
