Cod: Codfish Fritters

List of Ingredients
- 8 ounces salt cod
- 2 green onions, minced
- 1 small tomato, peeled, seeded and minced
- 1/2 to 1 Scotch bonnet chile or habanero pepper, seeded and minced
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1 large egg, lightly beaten
- 1/4 cup water
- Vegetable oil
Instructions
- Soak cod in cold water to cover in the refrigerator for 12 hours, changing water at least 3 times.
- Drain fish; remove and discard skin and bones. Combine fish and water to cover in a small skillet; bring to a boil over medium heat. Reduce heat and simmer, uncovered, 10 minutes or until fish flakes with a fork. Drain fish; cool and flake.
- Combine cod and next 3 ingredients. Combine flour and baking powder in a separate bowl; add to cod mixture. Stir in egg and 1/4 cup water just until blended.
- Pour oil to depth of 3 inches into a heavy saucepan; heat to 350 to 375 degrees (F). Drop cod mixture by teaspoonfuls into hot oil; cook 3 minutes or until golden, turning once. Drain on paper towels.
Makes 2 dozen fritters.
